Instant Pot Spanish rice recipe that is such an easy, very requested recipe, and a healthy version! My college daughter loves this version that is made with brown rice and oil free, but packed with Spanish flavor. A family favorite recipe of ours!
2 cups of long grain brown rice
2 tsp of vegetable bouillon (I like Better than Bouillon)
1 cup of crushed tomatoes (Cento brand is my favorite)
1 1/2 cup of water
1 cup corn
1/2 cup red peppers, chopped
5-6 Japanese Chile pods, finely chopped ( can substitute 1 jalapeño if desired)
1 cup of cilantro, chopped
1 tsp of garlic powder
1 tsp onion powder
black pepper to taste
1. Add all of the ingredients and cover with lid and lock into place.
Align the pointed end of the steam release handle to sealing.
2. Set to Manual and set for 22 minutes
3. Let the steam or pressure natural release on it’s own.
4. Add 1/4 c of fresh cilantro for garnish
