INSTANT POT SPANISH RICE RECIPE | Healthy & Easy



Instant Pot Spanish rice recipe that is such an easy, very requested recipe, and a healthy version! My college daughter loves this version that is made with brown rice and oil free, but packed with Spanish flavor. A family favorite recipe of ours!

INGREDIENTS:

2 cups of long grain brown rice
2 tsp of vegetable bouillon (I like Better than Bouillon)
1 cup of crushed tomatoes (Cento brand is my favorite)
1 1/2 cup of water
1 cup corn
1/2 cup red peppers, chopped
5-6 Japanese Chile pods, finely chopped ( can substitute 1 jalapeño if desired)
1 cup of cilantro, chopped
1 tsp of garlic powder
1 tsp onion powder
black pepper to taste

1. Add all of the ingredients and cover with lid and lock into place.
Align the pointed end of the steam release handle to sealing.

2. Set to Manual and set for 22 minutes

3. Let the steam or pressure natural release on it’s own.

4. Add 1/4 c of fresh cilantro for garnish

I usually get Lundberg Organic Short Grain Brown Rice (is there a special kind that works best for this recipe?). I would totally eat this all the time if I were in college! 😉 Xoxo

  10. OMG, this recipe is so perfect for me. I love this kind of food so much. Easy and healthy. Perfect for my diet. I make a diet since last year August. Actually I lost 30 Kilos, but I have to lose 20 Kilos more, to have my normal weight. In my videos I believe you can see the weight loosing process. In my first video I have 13 Kilos more than actually.

  13. I just got an Instant Pot today, and I'm looking for familiar recipes to start. This one looks great, but I'm concerned – I make stove top brown rice (plain old brown rice) and for 2 cups of rice I'd use far more than 1 1/2 cups liquid, even with the addition of tomatoes. Please clear this up for me.
    By the way, I've never added corn or cilantro (cilantro – yummmmm!) – what good ideas! I do put in several slices of bacon, chopped.
