2 lbs boneless skinless chicken breast, cubed
1 green bell pepper, chopped
1 yellow bell pepper, chopped
2 cups chopped zucchini
1 cup red onion, diced
1 16 oz bag frozen corn
1 15 oz can black beans
2 garlic cloves, minced
1 cup broth
1⁄2 cup cilantro, chopped
2 limes, juiced
1 tsp cumin
salt & pepper, to taste

  1. I finally got a slow cooker (well…my mum had one for a while but never used it so I finally took it). I have M.E. and cooking real food can be such a chore – not just the cooking itself but the shopping, the prepping, the cooking, and the actual eating part. I love being able to throw a bunch of stuff in a slow cooker and not think about it.
