Grilled Corn Salsa
5 corn on the cob, husked
6 bacon slices, cooked and chopped
1/2 green bell pepper, finely diced
1/2 red bell pepper, finely diced
1/4 cup diced red onion
2 tablespoons freshly chopped basil
1 tablespoon red wine vinegar
1/2 lime, juiced
Salt and freshly cracked black pepper

Heat the grill to high and grill the corn until it goes bright yellow and begins to brown on all sides, 1 to 2 minutes per side. Once the corn is cooked, remove it from the grill and allow it to cool completely before cutting the corn off of the cob.

To make the salsa, mix together the corn kernels, bacon, peppers, red onion, basil, red wine vinegar and lime juice. Season it with salt and pepper to taste.

Kiwi Cucumber Salsa
1 English cucumber, seeded and finely diced
1 cup peeled and diced kiwi
1 tablespoon freshly chopped mint
1 tablespoon freshly chopped cilantro
1 lime, zest and juice
1 tablespoon agave

Toss together all of the ingredients in a large bowl.

Spicy Peach and Pineapple Salsa
2 cups finely diced peaches
2 cups finely diced pineapple
1 jalapeño, seeded and minced (optional)
1 lime, zest and juice
1 tablespoon freshly chopped cilantro

Toss together all of the ingredients in a large bowl.

  2. My favorite salsa is one my mom makes that is a cantaloupe salsa! It's similar to your peach pineapple one with cilantro, jalapeno and lime but she uses cantaloupe instead and it's to die for!

  4. Guys, I’m confused, what is salsa? I thought it’s a Mexican spicy sauce, but here it looks like salad? Anyway I am certainly gonna give a try to those recipes, they look simple and delicious, no matter what we call them.

  5. Omg that cucumber kiwi salsa looks amazing! Now that is a recipe I could eat almost every morning for a different take on breakfast rather than eating oatmeal, or smoothies, breakfast bowls for breakfast all the time. Also, that grilled corn salsa would be good on a bed of arugala and spinach, then add a ranch dressing on top (or in my case a vegan ranch dressing) and avocado on top with red onion and bam you got yourself a grilled corn and green salad for lunch or eat for dinner!!

  10. Yum!! I love cucumber and kiwi as a combo. I make cucumber and kiwi smoothies, sometimes with honey dew melon, all summer long. I'll definitely be giving that salsa a try!

    Also I am laughing because the grater/zester you were using looks identical to the foot file I have.

  13. Can you do a video on coleslaw? I made my own recently, it’s healthier than a salad (without mayo), tastier than salad and I keep a huge bowl in the fridge for almost a week and we use it instead of veggies with dinner. I’m getting obsessed and it’s a good way to get in unusual veggies, I put purple cabbage and celeriac in and it looks sooo beautiful.
